Curry Lentil Soup…. Heals the body and soul

Author: Rebecca Verduci

For a cultural journey, extend the traditional Lentil daal into a soup, or try this recipe otherwise known as Tlokhe to the Assyrians. Nothing rejuvenates on a cool winters day more than SOUP. On those days where healing or a big WARM hug are needed, nothing satisfies quite like a big bowl of warm curry lentil soup. The heat from the curry and chilli continue to heal all through the day. Feel the benefits of this warming soup with your family today. Enjoy…

Ingredients

2 garlic cloves

1 tblsp olive oil

1 tsp chilli paste

2 cups red lentils

1 ltr vegetable stock

1 tblsp curry powder

salt and pepper to taste

Method

Heat oil on medium heat in medium sized pot

Fry off crushed garlic cloves for 1 minute

Add red lentils and curry powder and toss with garlic and olive oil for 1 minute

Add vegetable stock, chilli paste and salt and pepper to taste and simmer on low flame for 20 minutes. As pot sizes vary cooking times, you may need to add some boiling water if it appears to be absorbing all liquid. Add as much liquid until desired soup consistency has been reached. Turn off flame and allow to rest for a further 10 minutes allowing lentils to become soft and tender.

For added protein shred up some left over roasted chicken and toss through at end.

Amazing, healthy, quick dinner sorted that the whole family will LOVE…
