For a cultural journey, extend the traditional Lentil daal into a soup, or try this recipe otherwise known as Tlokhe to the Assyrians. Nothing rejuvenates on a cool winters day more than SOUP. 2 garlic cloves
1 tblsp olive oil
1 tsp chilli paste
2 cups red lentils
1 ltr vegetable stock
1 tblsp curry powder
salt and pepper to taste
Heat oil on medium heat in medium sized pot
Fry off crushed garlic cloves for 1 minute
Add red lentils and curry powder and toss with garlic and olive oil for 1 minute
Add vegetable stock, chilli paste and salt and pepper to taste and simmer on low flame for 20 minutes. As pot sizes vary cooking times, you may need to add some boiling water if it appears to be absorbing all liquid. Add as much liquid until desired soup consistency has been reached. Turn off flame and allow to rest for a further 10 minutes allowing lentils to become soft and tender.
For added protein shred up some left over roasted chicken and toss through at end.
